Beet Salad Cooking with Oralia
Beets:
Wash and trim the beets
Preheat oven to 450 degrees
Place beets on a large piece of foil on a baking sheet
Fold foil around beets and crimp ends from a packet
Roast until beets are tender when pierced with a knife, 35to 45 minutes
Cut beets in small pieces
1 Cucumber, chopped
¼ Red onion, chopped
3 Tb Feta cheese
Pecans (add to taste)
Dressing:
4 Tb Olive oil
2 Tb Apple vinegar
1 Tb Lime Juice
½ Teaspoon salt
1 Teaspoon sugar (I usually use Monk fruit)

How to:
Place all ingredients in a bowl and mix it all up and leave it on the fried for at least one hour. A warm salad is not a tasty salad!
