Beet Salad Cooking with Oralia


​Wash and trim the beets

​Preheat oven to 450 degrees

​Place beets on a large piece of foil on a baking sheet

​Fold foil around beets and crimp ends from a packet

​Roast until beets are tender when pierced with a knife, 35to 45 minutes

​Cut beets in small pieces

1 Cucumber, chopped

¼ Red onion, chopped

3 Tb Feta cheese

Pecans (add to taste)


​4 Tb Olive oil

​2 Tb Apple vinegar

​1 Tb Lime Juice

​½ Teaspoon salt

​1 Teaspoon sugar (I usually use Monk fruit)

How to:

Place all ingredients in a bowl and mix it all up and leave it on the fried for at least one hour. A warm salad is not a tasty salad!
